The Concept

Atomic.archives is a new series of intimate, education led tastings at our Kingsland brew bar. Each edition opens the archive on one origin, giving guests direct access to the producers, processes and competition stories behind the coffee in their cup.

For the first edition, we're heading to Colombia to explore three coffees pushing specialty coffee in different directions: from experimental enzymatic washing to anaerobic fermentation and a competition worthy anaerobic washed coffee.

Proceeds from both sessions go to the Colombia Earthquake Relief Fund, via GlobalGiving

Nariño · El Paseo Farm · Atomic Outlier Orange blossom, vanilla bean, jasmine

A third generation coffee grower who spent much of his career as a maths teacher before returning to the family farm. This enzymatic washed process is experimental and unique, developed to highlight the coffee's floral character. The result is clean, complex and one of a kind.

Jhonatan Gasca

Huila · Bella Vista Farm Lemonade, red grape, rosewater

Jhonatan produced the coffee Jack Simpson used to place 2nd at the World Barista Championships. This anaerobic natural showcases purposeful, controlled fermentation: bright lemonade upfront, layered with fizzy red grape acidity and a perfumed, lingering finish.

Anibal Diaz

Huila · Los Nogales Farm · 2025 Aotearoa Barista Championship Fresh strawberry, tropical juice, grapefruit. With milk: vanilla bean ice cream, banana, apricot

This is the exact coffee our coffee trainer Heesun used in her 2025 Aotearoa Barista Championship routine. Anibal oversees sensory evaluation and fermentation research at Los Nogales, a five generation family farm. Paired with our freeze distilled milk, it drinks like dessert.
