You wouldn’t wear hiking boots to a dinner party. Same logic applies to coffee — different beans (and brew methods) deserve different roast profiles and thoughtful roasting.
That’s why we don’t treat every coffee the same — and why you’ll see terms like espresso roast, filter roast, and omni roast popping up across our line-up. Here's what they mean, and why they matter.

What is a roast profile, anyway?
A roast profile is like a roaster’s playbook — a mapped-out plan that controls how heat is applied to green coffee over time. It’s what transforms grassy, raw beans into rich, aromatic coffee, carefully balancing sweetness, acidity, body, and bitterness along the way.
The goal? To unlock the unique character of each coffee, not mask it. Some coffees thrive when roasted light and bright; others hit their stride with a bit more development. It’s about bringing out the best in the bean — and in your cup.
Omni, Filter, and Espresso Roasts: What's the Difference?
Omni Roasts
An omni roast is designed to perform well across both espresso and filter brewing methods. Think of it like a Swiss Army knife — versatile, flexible, ready for anything.
Omni roasting strikes a balance between enough development to create body for espresso while keeping enough brightness and clarity for filter. It's a great option for cafés serving a range of brews, or home drinkers switching between espresso and pour-over.
That said, while omni roasts are convenient, they sometimes mean giving up a little bit of peak performance on either side. Like all compromises, it's about finding the sweet spot.
Filter Roasts
Filter roasts are crafted with slower, gentler brewing methods in mind — like pour-over, batch brew, or AeroPress.
We typically roast filter coffees lighter, focusing on preserving bright acidity, vibrant aromatics, and delicate sweetness. Here, clarity is key. You’ll taste more fruit, florals, and complexity, with a lighter body compared to espresso-style roasts.
If you love tasting the full spectrum of flavours in your cup, filter roasts are your best friend.
Espresso Roasts
Espresso roasts are tailored for brewing under pressure, where extraction happens fast and intensively.
We roast espresso coffees slightly deeper to encourage richer caramelisation, more body, and rounder sweetness. The goal is a cup that's bold enough to stand up to milk, yet still balanced and interesting as a black espresso.
Too light a roast under espresso pressure can lead to sharp acidity or a sour shot. That’s why a dedicated espresso roast gives you a smoother, more forgiving pour.

Why We Don’t Roast All Coffees the Same
Each coffee is different. A dense, high-grown Ethiopian is nothing like a lower-altitude natural-process Brazil. Roasting them identically would flatten out what makes them special.
Brewing method matters too. The intense pressure of an espresso machine extracts flavours differently than a slow filter brew. Matching the roast to the brew unlocks the right balance of sweetness, body, and clarity.
