Colombia Luis Miguel Diaz
Produced by Luis Miguel Diaz at Finco Villaroa. For this microlot cherries were strictly picked with the same level of ripeness, floated and hand sorted. The cherries are then exposed to a dry anaerobic fermentation of 15 hours and then placed on wooden patios to dry lo the ideal moisture content level.
Luis Miguel is one of the first growers to produce naturals in Colombia but unfortunately due to climate conditions and low demand for naturals he stopped producing naturals in 2017. However, since Luis Miguel met Cofinet he was encouraged to once again produce naturals. After spending time at Finco La Pradera (Cofinet's processing station) he has improved his processing technique and continues to work closely with the Cofinet team lo further develops his processes.
