Lovingly grown by Yemerson Abarca and the Abarca/Zuniga families, this exceptional coffee comes to us by way of the Fabarzú micromill in the famed Tarrazu region of central Costa Rica.
Naturally processed, the coffee cherries are picked and fermented whole in an oxygen free environment, then placed on perforated drying beds for even and efficient drying. Sun dried until an exacting 12% moisture content, the coffee is dry hulled, removing the husk of the fruit.
Yemerson focuses on meticulous harvest practices and experimental processing methods - the anaerobic fermentation and extended drying time resulting in a sweet and complex coffee with watermelon and grape confectionary notes, jasmine, lavender, and white pepper all in the cup.
